Coconut Crockpot Chicken-- C3
My very first post on my Setting of Silver blog was coconut crockpot chicken. C3-- or C cubed. It is more of a template than a recipe.
Chicken+Coconut milk+Tomatoes. Cook in slow cooker for 4-6 hours on hight and 8 hours on low.
You can then do whatever spices you wish. The original recipe I read said to add cumin but that is one spice I don't like. I usually go Italian. I often add dehydrated onions and for sure either chopped garlic or garlic powder.
I also use chicken without the bones usually. Sometimes the bones fall apart and that isn't good eats.
So here ya go:
8-10 chicken pieces (I remove the skin)
1 15 oz can diced tomatoes
1 15 oz can coconut milk. (lite or regular but not sweetened.)
Spices...
Combine in slow cooker. Cook on high for 4-6 hours or low for 8 hours. At the end I often add frozen veggies of some sort. Peas are great! Asparagus.. broccoli. Seriously it is a blank canvas.
Serve with taters, rice or even pasta. A side salad would be nice.
I'll add a pic the next time I make it. And I make it in the Instant Pot now. So I'll let you know the deets on that when I do it.
