Happy Birthday to Me

 Today is my birthday and here were the highlights. I kind of wish I had written one of these every year.. just to look back and see what I was thinking and what was happening.... It could be like one of those "the day you were born" newspapers.  

My first birthday greeting was around 4 am when chatting with someone online.. these chats have become fairly frequent and I really enjoy having an insomnia buddy-- although I do hope we can both get some better ZZZs shortly!

I found out I am five years older than the Egg McMuffin. Since I make a mom-McMuffin for Andrew Every. Single. Day.  I think I am getting close to the McDonalds 10 billion sold... 

Ann Voskamp has a joy dare where you list three things each day led by her prompts.  One of them is "3 gifts hard eucharisteos."  Today has been one of those.   Sometimes I marvel at how I can feel joy in the middle of extreme difficulty.  Honestly.. seriously.... I have my moments,  but joy in the middle of hardship is an experience.... a trip.  More thoughts on that another time.

A walk outside... Brisk.  Sunny. Beautiful.  I felt the presence of the Lord.. or at least His nearness.




Magnificent Raw Vegan Pie.  A total fat bomb and I make it once a century because I could eat all of it in one sitting.  (FYI the entire pie has 3200 calories!!  so just eat one tiny slice)

A friend talking some sense into me (ok this happens many days).  We also discussed this Dan Mohler video which I listened to for the second time this week.  It is a must hear. There are a handful of "mentors" I have had in my life.  Some I know and some I don't.  He is on the short list (of those I don't know.)

A chat with an old friend who has become new again.  

A couple of gift bags that showed up on my doorstep.  

So many HBD greetings on FB. I'm not gonna lie-- I love those and all the texts :).  One was from a friend who we don't see or talk to very much and he wrote a prayer that was spot on.  He said he listened to God and wrote what he heard.. so it was basically like a HBD greeting from the Creator himself as well.  

Some blingy-bling from a friend..  she also said it was from God, Jesus and the Holy Spirit.

Fish Tacos.. are there any other kind?  

Many phone calls from friends and relatives.  I have a few I have to return tomorrow because my voice was going to give out.   A little Netflix.... and an early bed time for me.

Hey Siri

We look up EVERYTHING on the internet.  Use our phones for everything.  Everyone says to unplug but do we? This morning I was in the shower and thought, "I have to take my medicine in 20 minutes.  I can't say Hey Siri because I'm in the shower."   Another thought... how about "Hey God.  Can you remind me to take my medicine in 20 minutes?" Well guess what happened 20 minutes later (give or take).  I was walking out the door to get my locks trimmed and I hear that still small voice, "Hey take your medicine." no kidding.. no joke.. Got me thinking- maybe I should say Hey God more than Hey Siri.....

Coconut Crockpot Chicken-- C3

My very first post on my Setting of Silver blog was coconut crockpot chicken.  C3-- or C cubed.  It is more of a template than a recipe. Chicken+Coconut milk+Tomatoes.  Cook in slow cooker for 4-6 hours on hight and 8 hours on low. You can then do whatever spices you wish.  The original recipe I read said to add cumin but that is one spice I don't like.  I usually go Italian.  I often add dehydrated onions and for sure either chopped garlic or garlic powder. I also use chicken without the bones usually.  Sometimes the bones fall apart and that isn't good eats. So here ya go: 8-10 chicken  pieces (I remove the skin) 1 15 oz can diced tomatoes 1 15 oz can coconut milk.  (lite or regular but not sweetened.) Spices... Combine in slow cooker.  Cook on high for 4-6 hours or low for 8 hours.  At the end I often add frozen veggies of some sort.  Peas are great!  Asparagus.. broccoli.  Seriously it is a blank ca...
